TAVCÊ GRAVCÊ: This Pan-fried beans is a thick and consistent bean stew cooked in traditional clay pots. Various spices and vegetables are added to enhance the flavor, including fresh Macedonian red pepper. It is not your ordinary dry beans. It is something that cannot be wasted with a shallow definition such as “dry beans cooked in a stew”.

KEBAPÇİNJA: Spicy ground meat patties, usually served with loaf bread or lepinja (pita).

SHAR KÖFTESİ: Sharska Pleskavica is the best of the grilled varieties. It consists of kashar cheese (cheddar cheese) inside a large, round and flat meatball. When you cut the meatball in the middle with a knife, you will taste the combination of the slightly melted kashar cheese and the meat. Sharska is a very filling meatball variety.

AJVAR: Ajvar is one of the most popular appetizers you can try in Macedonia. Made with roasted peppers and eggplant, this appetizer is consumed as breakfast in the country. The spicier version is known as Pindzur. You can also buy the appetizer, which is sold in jars, and bring it with you.

TULUMBA: Sweet pastry with syrup, usually fried and sweetened with sugar syrup.

PALACHINKI: Thin crepe-like pastry, usually filled with chocolate, jam or fruit. You can find these crepes in many shops on the streets of Sofia at any time of the day. What to eat and drink in Sofia? It is one of the most practical and delicious desserts.

OHRID TROUT: Ohrid trout, which is served using a trout species endemic to Lake Ohrid, has a very important place in the city’s cuisine. The cleaned fish is cooked by stuffing it with spinach, egg yolk and sour cream. It is usually served with soup.

BOMBİCİ: Bombici, which means “miniature bombs”, are truffles made from a mixture of dates, almonds, figs and cocoa powder. These little ones are covered in a thick and rich chocolate ganache and rolled in grated coconut.

SELSKO MESO: Traditionally prepared in clay pots and containing pork, onion, smoked meat, minced meat, cream cheese, mushrooms, peppers and wine among its typical ingredients, Selsko Meso can be described as a mushroom and meat stew.
